Hello lovelies!
The weather around here is just too good to stay inside all the time. So lately, we finally started the barbecue season and spent a wonderful evening on our terrace. The Hawaiian Chicken Kebabs really helped to bring a summery feeling to us and I couldn’t have gone without my mum’s gorgeous potato salad. It’s one of my absolute favorites when it comes to sides. Furthermore, I think it is always good to have something on the table that you already know, when you try something new 😉 The combination of red onion, pineapple, chicken and curry is really gorgeous and super tasty. So, let’s have a barbecue!
For 2 portions you need:
- 1 chicken breast
- 1/2 pineapple
- 3 red onions
- salt, masala, oil
- 6 skewers
- 400g potatoes
- 1/2 glass sweetcorn
- 1 onion
- 100ml veggie stock
- 2 tbsp. sunflower oil
- salt, pepper
Preparation:
First, you peel the pineapple and remove the stalk. Then you slice it and cut the slices into equal pieces. Next, you peel the red onions and divide them into eights. Now, cut up the chicken breast into equal pieces and skewer the three components. Last, you make a marinade out of oil, salt and masala. Brush your Hawaiian Chicken Kebabs with it and let them marinate in the fridge.
In the meantime, you can prepare the potato salad. Therefore cook the potatoes with the skin on, until they are done. Meanwhile peel the onion and finely dice it. Now pour it in a big bowl and salt it. When the potatoes are done, peel and slice them. Put them in the bowl as well and add half a glass of sweetcorn. Then you make a dressing out of 100ml of veggie stock and 2 tablespoons of sunflower oil and season it with some black pepper. Pour it over the potato salad, give it a good stir and let it cool.
When the potato salad is cool, you can season it to your taste and put the Hawaiian Chicken Kebabs on the barbecue. The cooking time varies according to the kind of barbecue you use. The kebabs should be nicely browned and completely cooked through. It definitely helps to turn them a few times while grilling 😉
