Hello lovelies!

I just love those easy dinners that taste absolutely gorgeous. These panini are exactly what I needed. They are truely delicious due to the sun-riped tomatoes, aromatic buffalo mozzarella and fresh basil. Furthermore they remind me of my last, totally relaxed holiday in Italy and that must be great…

For 1 sandwich you need:

  • 1 big slice white bread
  • 1 beef tomato
  • 1 buffalo mozzarella
  • some fresh basil
  • olive oil for frying

Preparation:

First you wash the beef tomato and the basil and drain the buffalo mozzarella. Then you cut the slice of white bread into two equal pieces. Slice the tomato and the buffalo mozzarella and spread them on one half of the white bread. Now you can add the basil- to get the Italian tricolor- and finish your panini with the second half of your bread. Next you heat some olive oil in a pan and put the panini in. I use the lid of a big pot to press everything down. That is what it looks like:

As soon as the bread is nicely browned, flip it over and press down again with the lid. Don’t put the pan on high heat, because your panini will burn from the outside and still be cold on the inside. I recommend frying it on medium-high heat, but every stove is different, so just try it out. If you have a contact grill or a griddle pan, use them to get those amazingly flavorful dark stripes on your panini!
